Have you ever baked stuffed celery before? It's AMAZING! Stuffed celery in and of itself has always been at the top of my list for a favorite snack or holiday side dish, but baking celery in the oven brings it to a whole different level. The funny thing is, baked celery is pretty new to me. I was whipping up some stuffed celery sticks and thought: I wonder what would happen if I put these in the oven...? The answer, my dear friend, is magic. Celery + oven = effortless kitchen wizardry.

Really, can I bake celery?

Yes, you can really bake celery. And it's totally delish! When celery cooks in the oven, it loses it's crisp crunch and transforms into a tender, succulent low carb veggie.

It doesn't take much work at all either. Just fill the celery sticks with the ingredients of your choice; I used goat cheese, garlic, and basil for this baked stuffed celery recipe. You can even toss the celery sticks in the oven by themselves, and the results are surprisingly yummy.

On days where I'm not in the mood to cook, but I still want to enjoy something warm and healthy, I'll sprinkle salt on the celery and just let it bake as-is. I know it sounds so lazy, but sometimes the simplest things end up being the best!

Just preheat your oven to 350 degrees Fahrenheit and bake the celery for 30 to 40 minutes, until the celery becomes soft and supple, but not soggy or mushy. When cooked correctly, the celery will still have a bit of structure and bite to it when it's done.

Can I eat celery on keto diet?

You betcha. Celery is a low carb vegetable with most of the carb content coming from fiber. When counting net carbohydrates, fiber is completely subtracted from the total count. That means it's even lower in carbs that you probably thought. In 100 grams of celery, there are 2.97 grams of total carbohydrate, 1.6 of which is fiber. That clocks in at 1.37 grams of net carbs per 100 grams of celery; a beautiful choice for a ketogenic diet!

Not only is celery low in carbohydrates, but it's also loaded with potassium. Eating enough potassium plays a vital role in ensuring your electrolytes are in check to avoid the dreaded keto flu.

Ingredients

  • 2.5 oz goat cheese
  • 2 cloves garlic minced
  • ½ tsp basil dried, chopped
  • 5 stalks celery rinsed, cut in half
  • sea salt to taste

Instructions

  • Preheat oven to 350 degrees Fahrenheit.

  • Combine goat cheese, garlic, basil in a small mixing bowl.

  • Divide the goat cheese mixture between the celery stalks, stuffing the curved indent of the veggie.

  • Line a casserole dish with the stuffed celery stalks and top with sea salt to taste.

  • Bake in preheated oven for 30-40 minutes, until celery is cooked but not soggy.

      Ricotta would work well with this recipe and be a bit more mellow of a flavor. A recent comment on another recipe mentioned a baked Ricotta spinach mixture and I'm excited to try it out--I think something similar would work well with this!
