Basic Backstory
After having been stripped of his divinity as punishment for losing to V1 in the Gluttony layer and waiting for them to get to the Heresy layer, Gabriel's body became susceptible to mutations due to Hell's energy and eventually began morphing into a monster. He does not have the best time coming to terms with that fact and suffers frequent panic attacks and mental breakdowns
Physical Changes
I believe all his physical changes started all at once but some were more noticeable than others.

Overall he will grow bigger and stronger, his hands and feet will grow claws and it will take some time to get used to his new strength. He will harm himself accidentally more than others
He ignored the changes to his face most but the face was the very first part of him to morph. Whatever face he had under the helmet (if he had any) is gone and melded with his helmet, eventually realising he couldn't take the helmet off without ripping his flesh off. Inspired by the Death Angels of A Quiet Place (and no I did not make his face like this specifically because they're called that but honestly the coincidence is kind of funny)
His helmet splits into several segments to reveal his fleshy face underneath like armored plating and the cross on the front is no longer stationary and actively expresses his emotions similarly to eyes and eyebrows. He is not aware of when the cross moves but it gives second-parties a better understanding of how he feels when he speaks. The helmet plating still works as a normal helmet would when closed.
When his plates are open there will be six eyes, a large pair in the correct position with a pair above and below. His sclera will be black as night with large, dark blue pupils that are barely seen if only in the dark as they will glow teal just like his wings. His teeth are golden and sharp. There is no visible nose yet somehow he can breathe with his mouth closed
His halo and wings are still there, surprisingly unchanged
His gloves and shoes have also fused with his body and cannot be removed without causing bodily harm. They feel more like scales than fleshy skin, work just like armored plating, and are warm to the touch. Even if they were peeled from his body they would grow back as they were
His internal organs will morph and may induce vomiting spells until all changes have been completed, whenever that may be
His skin color will not change though he will be significantly warmer than a human, almost as warm as a Demon
The reddish-pink flesh of his new body will be much more sensitive to heat and touch so he would keep his plates closed unless with those he trusts such
A tail will eventually form, and he will experience a deep soreness and pain in his lower back when it starts to grow. The tail will be about a foot longer than his legs and the same color as his skin with teal feathers on the end. Imagine a rat’s tail but with feathers on the end
He will grow cat-like ears from the top of his helmet. They’ll work just like actual ears and he will hate them
Weapons and Armor
Any other armor besides his helmet, gloves, and shoes will morph to fit his body but will not fuse to his body (thankfully). They will crack and mishappen themselves to fit his body but will still keep their property that only the owner will be able to use them
Splendor and Justice will change as well. Since they’re holy weapons they will not respond to Gabriel well after he starts changing but if he keeps them they will also change due to being unprotected from Hell’s energy and warp and change accordingly
